Baked Chimichangas

I love Chimichangas but deep fried foods are not found on the path to a healthier me. I found a recipe for deep fried chimichangas and have tweaked and tweaked until tonight I've found perfection...this is it!!

Super Simple and Easy!!
Baked Chimichangas

Serves : 3 to 6

Prep. Time : 0:35 minutes

1.5 cups salsa
1 tsp. chili powder
1/2 tsp. ground cumin
1/4 tsp. ground cinnamon
3 chicken breasts cooked and shredded (I grilled them and put garlic salt on them)
(6) 12" flour tortilla - would be great with lower carb or whole wheat too
1 cup canned fat free refried beans
non-stick cooking spray - as needed

-Combine, salsa, chili powder, cumin and cinnamon in small bowl

-Working with one tortilla at a time, spray one side lightly with nonstick spray, flip over, spoon 2 Tablespoons of beans down the center of each tortilla; top with 1/6 of the chicken and 1/6 of the sauce. Fold the top and bottom of the tortillas toward the center, then roll up the sides.


-Secure with wooden toothpicks or pieces of spaghetti noodles if necessary (I didn't have to do this)

-Place chimichangas in a 13" X 9" X 2" baking pan sprayed with cooking spray, seam side down until crisp, turning after 10 minutes.

I know the cinnamon sounds like an odd thing to add but trust me on this one!
