Skillet Supper – South Beach Phase 2 friendly

I like a lot of the South Beach recipes because they give a healthy balance of protein, carbs and fat. This was perfect comfort food on a cold night when I needed a fast and easy meal!



Skillet Supper – South Beach Phase 2 friendly

1/2 lb ground beef or turkey (I use Jenny O extra lean turkey)
1/2 cup chopped onion
1 medium stock celery finely chopped
1 can (14 1/2 oz) beef broth
1 1/2 cups ww penne pasta, uncooked
1 can (14 1/2 oz) petite diced tomatoes
1 1/2 cups frozen cut green beans
2 Tbsp tomato paste
2 tsp oregano
1/2 tsp garlic powder
¼ tsp black pepper or to taste
3/4 cup reduced fat crumbled feta cheese, divided

1. In large skillet sprayed with nonstick cooking spray or olive oil, brown turkey with onion and celery over med-high heat. Drain fat.
2. Add broth; bring to boil. Stir in pasta. Return to boil and simmer, covered, 8 min.
3. Stir in remaining ingredients except for cheese. Return to boil. Stir in 1/2 cup feta cheese. Simmer, uncovered, 7-10 min. until sauce thickens slightly. Sprinkle with remaining feta cheese.
