Protein Pudding

This pudding is super thick, rich and delicious! It's great to eat on its own or it would make a fabulous pie filling.

2 cups of low fat cottage cheese
1 cup of low fat milk
1 box of sugar free, fat free pudding mix, any flavor

Serves 4



Just three simple ingredients, 1 cup of low fat milk, 2 cups of low fat cottage cheese and a small box of sugar free fat free pudding mix, your choice of flavor.



Put 2 cups of low fat cottage cheese and 1 cup of low fat milk in the food process and blend for one minute. If you use a hand mixer, make sure you blend it until its thick and creamy, no lumps.

I know you might be thinking eeewwwww, yuck, cottage cheese but trust me, you'll never know its cottage cheese once its blended.

Add in the pudding mix and blend until throughly blended. Divide into four equal portions. I put it in ramekins but you can use the mixture to layer with fruit for a parfait. I have tried this with cheesecake flavored pudding and topped with fresh strawberries. I've also used banana creme flavore and sliced in bananas...Ken's favorite!


Here is the finished product. SERVES 4

Great reasons to add more protein to your diet...protein keeps you full longer. One dish of this keeps me going for hours, the same amount of pudding would leave me looking for another portion or three.

NICE! I'm SO making this!! (I have a tub of cottage cheese that's about to expire, and I figure I can only eat so many cottage cheese/oatmeal pancakes! hehe)

Very timely--I was just thinking that I wanted to figure out a protein pudding. I rarely feel like eating anything substantial in the morning, and regular SF pudding doesn't exactly keep me going until lunch time!

I was wondering though--can you taste any hint of cottage cheese flavor? 'Cuz I hates it. :)

Honestly, I can't tell there is cottage cheese in there, I shared some with my sister and she had no idea and kept asking how I got it so thick. The key is allowing the milk and cottage cheese to mix as long as it takes to make the mixture smooth.

Last night in a moment of boredom I wondered if I could make fake chocolate mousse with cottage cheese. I plunked one big portion of cottage cheese into my bullet blender cup, and, scooped out one snack size container of ready-to-eat sugar free pudding, and blended them together with a teaspoon of cocoa powder to make it darker. It was tasty, but, too thick for that little cup. I said "I'm sure someone has a smarter way" and voila! I found you! I'll use your method next time. Note, your list of ingredients calls for 2 cups milk but your typed post calls for 1 cup. I'll figure it out as I go, but just pointing out the discrepancy.
